The SWAN Recro SI-8B: what it is and who it is for
The SWAN Recro SI-8B is a manual kakigori machine manufactured by Ikenaga Iron Works in Osaka, a company that has been making shaved ice equipment since 1930. It is not the easiest machine to use, not the lightest to move, and not the cheapest option in our range. It is, however, the machine that professional kakigori operators in Japan reach for when they want manual shaving at a commercial scale.
Build quality
The body is cast iron. The shaving components are stainless steel. At approximately 18 kg, the SI-8B stays in place during operation without needing to be clamped or braced: its own weight does the work. The crank mechanism is smooth and consistent across the full rotation, which matters at 800g of ice per minute: any roughness in the mechanism translates directly into texture variation in the shave.
The blade is adjustable for fine or coarse output. Fine is the correct setting for traditional kakigori. Coarser settings produce a heavier, crunchier result that some operators prefer for certain applications or topping combinations.
Why manual instead of electric
The SI-8B produces excellent ice. Electric machines with comparable blade quality also produce excellent ice. The practical differences are: the SI-8B is quieter, relevant in a small shop or at an event where the machine is front-of-house; it requires no power outlet; and it gives the operator direct tactile feedback about ice temperature and texture during the shave. Experienced operators can adjust pressure mid-shave based on feel. Electric machines offer consistency and speed instead.

Accessories and blade maintenance
A cube ice holder is available separately, allowing the SI-8B to handle cube ice in addition to standard block ice. This extends the machine's utility for operators who do not have consistent access to block ice supply.
Blade maintenance is the one non-negotiable operating requirement. Each blade delivers optimal performance for approximately 500 servings. After that, the shaving quality declines noticeably: the texture becomes coarser and less consistent. Keep replacement blades on hand before you need them, not after. Running a high-volume event on a degraded blade is the most common operational mistake we see with this machine.
