Kuromitsu is the sweetener of Japanese confectionery. Made from unrefined black sugar, it has a depth and complexity that white sugar syrups do not: a molasses note, a caramel richness, and a sweetness that is warmer and rounder. In kakigori it is most commonly used as a finishing drizzle over the completed bowl, adding depth and dark visual contrast. This cafe-style concentrate is the same format used across Japanese wagashi shops and dessert bars.
