Nanko ume is the most prized plum variety in Japan, grown in Wakayama prefecture and known for its large size, thin skin, high juice content, and sharp sourness. As a bar-style concentrate, it captures that assertive character faithfully. The sourness is pronounced — condensed milk is almost essential to balance it. The flavor is deeply traditional and distinctly Japanese.
