Shikuwasa is a small, green citrus fruit native to Okinawa. Its juice is one of the most intensely citrusy liquids you can put on a kakigori: sharply tart, highly aromatic, and completely unlike any standardized citrus product. In Okinawa, it is used as lime and lemon are used everywhere else — squeezed over grilled fish, added to awamori, diluted into drinks — with the same casual everyday relationship that Europeans have with lemon.

On kakigori, the most effective use is as a finishing drizzle over a sweeter base syrup. A small pour of straight shikuwasa juice over a melon or lychee kakigori cuts through the sweetness and adds an aromatic citrus note that transforms the bowl. At 2L per bottle and high acidity, a single bottle goes a long way when used as an accent rather than a primary flavor.
