Sudachi is a small, green citrus fruit native to Tokushima, used in Japan as a souring agent over grilled fish, noodles, and sake. As a bar-style kakigori concentrate, it produces something sharper and more assertive than yuzu, with a vegetal green note that makes it one of the most interesting citrus options in the range.
