Yuzu is the citrus fruit that defines autumn and winter in Japanese cuisine. Its flavor sits somewhere between lemon and grapefruit but is more complex than either: tart and bright on the surface, with a floral depth that no other citrus replicates. This bar-style concentrate captures that aromatic character faithfully — the same professional format used in Japanese bars and kakigori shops. Over shaved ice, the ice dilutes the intensity without masking the aromatics.
