Kabosu is a Japanese citrus grown almost exclusively in Oita prefecture. Its flavor sits between yuzu and sudachi: more aromatic than sudachi, less floral than yuzu, with a clean tartness and a subtle complexity that makes it a prized ingredient in Japanese cuisine. As a kakigori accent, it adds a layer of aromatic citrus that no standard lemon or lime can replicate. Used sparingly as a finishing drizzle, a single 1L bottle will serve dozens of bowls.
