Melon is one of the three or four flavors that define kakigori at its most recognizable. At festival stalls across Japan, the pale green mound is as much a visual signal of summer as the blue-and-white banner above the counter. This is a professional bar-style concentrate — the same format used in Japanese bars, cafes, and kakigori shops — designed to be poured directly over shaved ice or diluted 1:3 with water for drinks.

The sweetness is well-calibrated for shaved ice: intense enough to saturate through layers of ice, without becoming cloying when condensed milk is added. Pour over sparkling water with a scoop of vanilla ice cream for a near-exact replica of the Japanese melon cream soda.
