This cafe-style concentrate is designed for making café au lait without an espresso machine. Dilute 1:3 with cold or hot milk for an immediately ready coffee drink. The balance is calibrated for everyday use: strong enough to taste like coffee, mild enough for people who do not drink espresso.

Over kakigori it produces a coffee-milk shaved ice that sits between an Italian affogato and a Japanese kakigori: cold, lightly sweet, genuinely refreshing. Add condensed milk over the top and optionally a few shiratama mochi for texture.
