Hiyashiame is one of the oldest kakigori flavors in Japan. The name means cold candy syrup in Edo-period Japanese, and the drink itself predates modern shaved ice machines by centuries. Most contemporary kakigori shops no longer offer it, which makes it a genuinely rare find. This cafe-style concentrate captures that traditional ginger warmth faithfully.
